Anyone who bakes sourdough regularly knows the moment: the dough sticks, flour covers the worktop and a thin plastic scraper bends as soon as a firm wheat dough pushes back. A solid wood dough scraper behaves differently. It stays stable, sits calmly in the hand and guides the dough with a carefully sanded edge.
Our oak dough scrapers are made in the workshop in Staufenberg, Central Hesse. Özgür shapes every piece by hand. The outline is cut, the edges are sanded in several stages and the surface is finished with food-safe oil. The result is not a perfectly identical factory product. Grain, colour and weight follow the piece of wood.
What makes a useful dough scraper?
The edge matters first. It needs to be fine enough to lift bread dough cleanly from the worktop, but it should never become sharp or fragile. A gently rounded sanding profile protects the table and gives enough control to divide a firm dough or slide under a shaped loaf.
Material matters as well. The scraper is made from solid wood without a plastic coating. Oak is robust and has a reassuring weight in the hand. Depending on availability, other species such as walnut or cherry may be offered. For anyone looking for a wooden bench scraper or lasting sourdough equipment, it is a tool designed for repeated use rather than quick replacement.
Sourdough gives the scraper several jobs. After bulk fermentation it helps release dough from the bowl, divide larger batches and collect sticky remains from the surface. A flexible plastic scraper still has its place with very wet doughs. The wooden scraper does not have to replace every specialised tool.
