For the moment when juice leaves the food

A juice groove needs enough board thickness and enough remaining cutting surface. If the board is too small, the groove can take away more space than it gives back.

When no groove is better
For bread, dry prep or a very minimal work board, a flat surface can be more practical and easier to wipe clean.
